Two Days In One | J.Lo’s 10 Day Challenge

J.Lo's 10 Day Challenge of No Carbs No Sugar

I accidentally forgot to post my day 5 yesterday so I’m posting day 5 and day 6 today. If you missed day 1 or why I’m doing this challenge, click here!

Day 5

Breakfast

Breakfast didn’t really go as planned. I was planning to eat the same as the other day. However, I wasn’t totally convinced that my egg bites were ok to eat. I didn’t really have anything else prepped. So, I ended up skipping breakfast. I hate doing that because it’s not healthy at all, but this is what happened. I snacked on fruit and almonds throughout the day.

Lunch

For lunch, I decided to eat the rest the cauliflower pizza that I made yesterday. I know I probably shouldn’t have (read why here), but I definitely didn’t want to waste it.

Dinner

Dinner was a huge success. I attempted spaghetti squash pasta with pesto, topped with mushrooms, broccoli, and sun-dried tomatoes. I didn’t use one recipe, but for guidance on the squash, I watched a YouTube video on how to cut and roast it. After doing that, you just scrap the inside and it looks like pasta. The pesto came from Trader Joe’s. It’s the kale, cashew, and basil pesto.

Day 6

Breakfast

Hoda wasn’t joking when she said day 6 was the hardest. I definitely felt it! I was able to make some more egg bites, but they completely crumbled apart after I forgot to spray my muffin pan with non-stick. So I had plain greek yogurt with some strawberries. I ended up being busy anyway because I had family coming over.

Lunch

I had to run to Whole Foods with my mom in preparation for a small family dinner. So, I went to the hot bar and grabbed all the hot vegetables. It is times like these that I wish I ate chicken because there was no fish out.

Dinner

For dinner, we had salmon and vegetables. We also had rice, sweet potatoes, and spaghetti but of course, you know I couldn’t eat those things.

Today’s Takeaway

My family brought over a whole basket of sweets. So, cookies, brownies, apple fritters, and etc are in my house right now. It’s taking so much restraint to not take a bite.

Going into these last 4 days, I thought about cutting the challenge short. I miss falafel, sweet potatoes, and beans. I think a low carb (or keto) diet is just not a long-term option for me. I think after the challenge I will need to practice moderation (especially with sweets). So, I know that will be my next goal after this reset.

Question of the day: What are your thoughts on low carb or keto diets?

    1. Hi Ray! Yes, keto diets do seem to be very popular. However, I do want to emphasize that with any diet, make sure it is a stable, long-term change. Otherwise, it can be very easy to fall back into old habits. Additionally, know your body! My body is not really liking this 10 day challenge, but I suspect that keto is incredibly easy for a normal meat eater. I thought that being a pescatarian I would have an okay time, but this is not the case. I can only imagine how hard it would be for vegetarians and vegans. Not everyone will have the same experience so if you’re going to try it out, I would suggest to try it out for a week and monitor how your body reacts.
